Luis Mourão is an example of how passion can lead to perfection. He practices his art by valuing seasonal products and the portuguese gastronomic culture, with a natural preference for the sea flavours from the Algarve region, mixing tradition and innovation. With extensive experience in leading prestigious cuisines, he was Executive Chef at Convento do Espinheiro in Évora and has worked at Pousadas de Portugal and the "Bica do Sapato" Restaurant, among others.

He has represented Portugal in several gastronomy festivals around Europe and America and has also been a teacher at Turismo de Portugal and "Fundação Alentejo". In 2012 Luis Mourão was one of the resident chefs on the tv show "Top Chef".

Chef Igor Candeias, a native of Peroguarda in the Alentejo, whose cuisine reflects a deep connection to his roots, combined with a contemporary approach and an eye for detail.

A graduate of the Escola Profissional de Alvito, he began his career at the Convento do Espinheiro Hotel in Évora, where he developed the technical foundations that would underpin his development. Shortly afterwards, he joined the team at EPIC SANA Algarve from its opening, experiencing various gastronomic concepts and environments that enriched his culinary vision.

At the Al Quimia restaurant, he found the ideal space to assert his identity, embarking on a path of solid growth that led him to the position of chef. His cuisine stands out for its creativity, precision and respect for the ingredients, always with a strong emotional element and a contemporary take on tradition.
